On the server (for capturing sound from the applications), I am afraid
not, not yet.
I guess we should add an option to allow the user to select the sound
server to use.
(it doesn't look too difficult to do)

Client side, the output will go to the default sound system found by
GStreamer's "autoaudiosink".
You can override it with:
XPRA_SOUND_SINK=alsasink xpra attach ..
